This frosting base is free of partially hydrogenated oils (PHOs) and uses minimal preservatives, ensuring a more natural product for health-conscious consumers. To create silky and creamy icing, combine 10 lb. of icing base, 27.5 lb. of icing sugar, 8 lb. of emulsified shortening, 3 oz. of salt, and 8 oz. of single strength vanilla into a bowl. Keep 3 to 4 lb. of cold water nearby. Add two-thirds of the cold water into the bowl and mix. Add in the rest of the water gradually while creaming, then continue to mix for a minimum of 10 minutes after all the cold water has been incorporated. The mix should yield about 50 lb. of icing. The amount of water added can vary due to weather conditions. Use less water in hot climates and more water in cold climates. It s recommended to store the base in 65-75 degree Fahrenheit temperatures.
